Eggplants are a versatile vegetable that can be prepared in a variety of ways,. One of the most flavorful methods is by grilling them. Grilled eggplants have a wonderful smoky aroma and soft texture that goes perfectly with numerous dishes. Ingredients:
- Eggplants
- Extra virgin olive oil
- Salt and pepper to taste
- Optional: chopped garlic, fresh herbs such as thyme or rosemary, balsamic vinegar
Instructions:
- Prepare the grill: Preheat the grill over medium-high heat.
- Prepare the eggplants: Wash the eggplants and cut them into slices about 1 cm thick. You can cut them lengthwise or crosswise, depending on your preference.
- Brush with olive oil: lightly brush both sides of the eggplant slices with extra virgin olive oil to prevent them from sticking to the grill and to give them a nice sheen.
- Season to taste: Season the eggplant slices with salt and pepper. Add chopped garlic, fresh herbs (rosemary, thyme ) or a splash of balsamic vinegar for extra flavor.
- Grilling: Place the eggplant slices on the grill and let them grill for about 4-5 minutes on each side, or until they are soft and have nice grill marks.
- Serve: Remove the grilled eggplants from the grill and serve immediately as a side dish, or let them cool and use them in salads, sandwiches, wraps or as a topping for pizzas and flatbreads.
